Ingredients:
2 large Sweet potato
1 lb Pork
1 Onion
2 sl Ginger root
2 tb Sesame oil
1 tb Soy sauce
1/2 tb Salt optional
Pepper
1 cup Chicken stock
2 tb Curry powder
Oil for stir-fry
Method:
1. Peel sweet potatos and cut into 1/2 inch slices.
2. Cut pork in 1/2 inch cubes.
3. Slice onion thinly.
4. Mince ginger root
5. Heat oil and deep-fry sweet potatos until golden. Drain on paper
towels.
6. Heat remaining oil. Add ginger root and onion and stir-fry for a couple of mins.
7. Add pork and brown lightly on all sides.
8. Stir in soy sauce, salt and pepper. Then add stock and curry powder and bring to a boil, stirring.
9. Add deep fried potatos and simmer, covered, until pork is done, about
30-40 minutes.
