Grimod de la Reyneire was one of the earliest and most respected food critics in France. He set the tone for Parisian gourmets and gourmands during the 18th century. In one of his articles he wrote, "Soup puts the heart at ease, calms down the violence of hunger, eliminates the tensions of the day, and awakens and refines the appetite."
