Although he has been exposed to hundreds of international dishes he has a deep appreciation for American cuisine. It's been several years ago that chef-owner of Lafitte's Landing in Donaldsonville, La., was invited to prepare a special dinner for the Pope and some 60 members of the American College in the Vatican. John Folse prepared the eight-course repast, which featured typical Cajun and Creole dishes.
